From the moment we record your order in the UPS system, they will send to your email address its situation. Our delivery time to United States is between 12 and 15 working days from the date of confirmation of your order.
Shipping costs for the USA are calculated according to the weight of the order. The online shop makes the calculation automatically. The high levels of polyphenols in most of the varieties are striking. These polyphenol values, except in the Arbequina and Hojiblanca varieties, exceed those required to be indicated on our labels:
"olive oil polyphenols contribute to the protection of lipids in the blood against oxidative damage", according to the EU regulations.
Below you can get brief information about the meaning of each parameter:
Acidity.- It is a general index about the quality of the Extra Virgin Olive Oils. It indicates the quality of the olives at the moment of the milling, as well as the care during its production and preservation. (more about the acidity of the virgin olive oils). An extra virgin olive oil must have a level of acidity below 0,8º.
K270.- It offers an indication of the secondary oxidation level , since it measures compounds generated on it: Aldehydes, Ketones and conjugated Trienes. Those Olive Oils with high levels of K270 should get defects of Rancidity. To be Extra Virgin Olive Oil, k 270 levels must bebelow 0.22.
K232.- This level offers a general indication of the primary oxidation levels. It is more generic than the peroxide index. To be an Extra Virgin Olive Oil, k232 level must be below2.5.
Delta K.- It detects mixtures of virgin olive oil with refined olive oil. The Extra Virgin Olive Oil must have values of delta K below or equal to 0.01.
Polyphenols.-Polyphenols are Olive Oil natural components with antioxidant and anti-inflammatory properties. It is considered that a daily consumption of 20 ml Extra Virgin Olive Oil with a concentration of polyphenols over 250 mg/kg prevent the fats oxidation in the bloodstream (more about polyphenols).
Our company is certified and follows all the procedures as Integrated Production Agriculture. We try to minimize the use of fertilizers in our olive fields. All our olive oils are free of traces of pesticides.

Las Valdesas Extra Virgin Olive Oils are unfiltered. In Las Valdesas we prefer not to filter the olive oils because aromas and flavors can get lost. That's why it has vegetable remains in suspension that are those who give the cloudiness to the olive oils. (More differences between filtered and unfiltered olive oils)
In our stainless steel tanks these vegetable particles are decanted throughout the months in a natural way, and settle at the bottom of the tanks. Therefore, if you have bought them just after the season, between November and January, the olive oil will be newly ground and it will be cloudy; while, if you buy them later, they will be more transparent because much of these elements in suspension will be already decanted.
Because of the extra virgin olive oil is a fruit juice, we recommend its consumption as fresh as possible. This way, it preserves all its nourishing and culinary qualities. However, some customers do not like the Olive Oils too fresh. We recommend to these clients to purchase the olive oils from May, when the oils are practically decanted, or in case that they have already acquired them, to preserve them before consuming for some months, since they will decant also in the bottles.
In the picture, we show you two glass flasks with our extra virgin olive oils. The one on the left is cloudier than the right one. Both are unfiltered and harvested the same year.
But there are two differences: the olive oil on the left was produced at the end of December and the other one on the right, at the beginning of the season, at the end of October and early November, therefore the second has had two more months to decant.
On the other hand, the olive oil on the left is from Hojiblanca variety, while the other is Arbequina variety, two of our five Single Extra Virgin Monovarietals.
The Olive Oil of the variety Hojiblanca, at least that of Las Valdesas, is the slower decanting among all of them. In fact the picture was taken in July.
We are often asked about filtered olive oil that becomes cloudy.
This mainly happens to our customers in Europe during the winter. As temperatures drop from 15°C to 5°C, some fatty acids in the oil start to solidify. Before fully freezing, the oil takes on a cloudy appearance, making it look unfiltered.
Simply warming the bottle near a heat source will restore the oil to its clear, filtered look. Rest assured, the olive oil is perfectly safe to consume.

At Valdesas estate the olive harvest begins in late October and usually ends in early December.
The olive fruit varieties are collected by order of ripening, being the Frantoio and Arbequina the most early season, followed by Manzanilla, Hojiblanca and Picual.
Generally, if weather conditions do not prevent, in mid-November we already have available fresh olive oil from the new harvest of all varieties.

Fresh olive oils are very popular in the main producing areas as the voice of a new oil mill already has run, people around will buy directly from them. They are unfiltered olive oil directly from the mill.
They have a more dense and cloudy appearance than olive oils at supermarkets. Tasting these fresh olive oils, consumers realize that extra virgin olive is a genuine olive juice.

Read moreOn many occasions we have been asked what the reason is for packaging our olive oil in PET plastic. These questions come from various perspectives, from the point of view of oil conservation, through health, the environment and the brand image that we give to our oil.
There are two reasons why some claim it inappropriate to pack olive oil in plastic.
Regarding this point, we have not found any data on the value of said porosity. To what extent is it relevant within 1, 2, 5 or 10 years of an unopened container? As we understand it, it must be a really small porosity since PET plastic is used to pack water, which molecule (H2O) is much smaller than oxygen (O2). (It's a little bigger than half). We don't quite see how it can be impermeable to water but not to oxygen. If someone who reads this can give us a satisfactory answer, we would be happy to hear more.
On the other hand, once the cap or the seal of a PET, glass or brass container is opened, the porosity ceases to be relevant, because with the open cap the air passes with each use, no matter how impermeable the container is.
In this case we absolutely agree. This has a great impact when the oil is sold in stores and supermarkets. Stored in shop windows and shelves under sunlight or artificial light, the effect is important.
On-demand packaging and direct online sales reduce the problem because the customer receives the package at the door in an opaque cardboard box without it having been exposed to light. They can then store it in an unexposed place.
Since we sell our oil online and light is not a problem we prefer to pack in transparent plastic. We like to be able to see the color it has and check its appearance, and for customers to see the differences in color between the different varieties we have, as well as the filtered and unfiltered oils.
Plastic packaging has always been under suspicion for containing substances that are dangerous to the health and that could migrate into food and be ingested.
As scientific studies discover and the public authorities consequently restrict the presence of dangerous substances, we at Las Valdesas demand that our suppliers eliminate said substance from their containers, as well as request their corresponding certificate.
For example, our plastic containers are free of Bisphenol A.
The main problem we find in plastic containers is that they are not biodegradable. It is a problem not yet solved.
On the other hand, the recycling of PET plastic is already carried out in most European countries, although the use of recycled PET is restricted depending on the different European legislations. In some countries, the use of recycled PET for food packaging is already allowed. It is not yet allowed in Spain. As soon as legislation allows it and we consider that the suppliers comply with all health requirements, we will research the possibility of using it.
We are also keeping an eye on the new generation of plastic containers made with vegetable waste such as potatoes, but to this date we have only found them in solid food containers in restaurants and we understand that their shelf life is less than what is needed for olive oil packaging.
As soon as we find a container with these characteristics that allows for guaranteed storing of olive oil, we will use it.
